Port Lincoln Sardine Salad Sandwich
INGREDIENTS
1 tin of Little Tin Co Port Lincoln Sardine Fillets In Australian Oil
1 celery stalk, finely chopped
1 T capers, finely chopped
1/4 red onion finely diced
3 T whole egg mayonnaise
1 T parsley, finely chopped
2 T lemon juice
Salt
Pepper
4 slices dark rye bread, toasted
1 hand full of rocket
1 tomato, sliced
METHOD
In a large bowl, mash together sardines in half their oil, celery, capers, onion, mayonnaise, parsley, lemon juice, salt and pepper.
Spread mix between toasted bread slices and top with rocket and sliced tomato to make a sandwich.
