Port Lincoln Sardines with Pasta
INGREDIENTS
1 tin of Little Tin Co Port Lincoln Sardine Fillets in oil
400g spaghetti
3 cloves of garlic
1 cup seasoned bread crumbs
3/4 cup finely grated parmesan cheese
2 handfuls of parsley
salt & pepper
1 lemon
METHOD
1: Bring a large pot of lightly salted water to the boil, add spaghetti, cook until al dente & drain.
2: Add 1 T of oil from the sardines to a frying pan & sauté garlic.
3: Add drained sardines & cook for 1 minute (reserve remaining oil).
4: Add breadcrumbs & parmesan cheese - stir gently for 2 minutes.
TO SERVE
Drizzle warm pasta with remaining oil from can, stir through sardine mix, top with chopped parsley & parmesan and a lemon wedge - season to taste.
